If you were to think of her as a high level car she would be a Ferrari or a McLaren F1, only better and thus he compares her to a jet, which is what really rich people are buying nowadays anyway. There’s a catch, however, because they can’t take their relationship to the next level because of the girl’s doubts about Frank’s true feelings. Thus, he can’t release the full potential of their relationship just as you can’t release the full potential of a jet or a plane w/o flying it. I also like your interpretation that he is literally lying down thinking about her.
