I think that "We counted every minute left to go" doesn't neccessarily mean counting until something huge like marriage or a break up. But I think it's counting down to something simpler like the end of the date (or the end of the day together, you know. I really don't think this song is just exclusive to romantic relationships). Like they know that they'd have to be separated at the end of the day ("Like the day you took me home") but they still don't want it to end, so they'll count it down and, you know, make the most of it and have fun.
