Nice little pun there. (A man named John Scopes was the defendant of the legal case which they're referencing; informally known as "Scopes Monkey Trial")
But yeah, essentially stating that what is conventionally considered as immutable history is merely the story everyone at the time chose to agree, on often sacrificing truth for compromise.
Anyone else think this song sounds like germs of Perfection?
Alright I think the title of this one is about in the year 325 when (correct me if I'm wrong) the Bible was basically put together, parts were left out that were unnecessary or didn't fit their beliefs, things like that. Christianity was basically started in 325 when all the beliefs were set in black and white.
The song fast forwards to the Scopes Monkey Trial which jitpow already talked about. This just shows that what happened in 325 still affects modern times.

I think by the "halcyon fields of opportunity" he is referring to heaven or something likewise. And the fact that they turn out to be "consensual and arbitrary" means that they are not as wonderful as they seem since they were just what were decided upon by the meeting in 325, and are therefore not divine.
