God this song is beautiful. So bittersweet..
This is a beautifully artful song. The imagery is glorious as well as the story told. One can see the interplay of love and time placed against the backdrop of a metaphorical nature. "Time will take it all and it will, you'll see," despite the love he promises.
An example of the imagery is the mountain that represents their relationship in the first verse.

Iron and Wine's sound is just so amazingly original. The fact that their lyrics are so beautiful just makes the songs so much better.

I read it as a commentary on new and exciting relationships, and how they often move quickly at first and how infatuation is so very often mistaken for love and as a result plans and promises are made, only to fall apart at the hands of time when infatuation fails.
this always makes me sigh. i think theres something to be said that they're on top of this mountain that has weathered thousands of years, and theyre about to embark on this beautiful but tragically fleeting relationship in face of such eternity.

I think the fact that "Spring was on the mountain" they were on, but "lately she don't care for a warmer breeze" shows how, even though spring inevitably leads to the 'warmer breezes' mentioned, she doesn't want to think about the change time brings to a relationship and prefers to focus on their past. It's very difficult for a relationship to last if the two members are looking in different directions (one looking at the past, the other dwelling on the future). "Time will take it all" might not necessarily mean a reference to the future. Since both of them are affected by different parts of a sort of timeline, I think this line infers that their different views will force them apart eventually. "Promise what you will" and her kiss after his words are in the present, when promises are made, before these different viewpoints are realized.
