I think the fact that "Spring was on the mountain" they were on, but "lately she don't care for a warmer breeze" shows how, even though spring inevitably leads to the 'warmer breezes' mentioned, she doesn't want to think about the change time brings to a relationship and prefers to focus on their past. It's very difficult for a relationship to last if the two members are looking in different directions (one looking at the past, the other dwelling on the future). "Time will take it all" might not necessarily mean a reference to the future. Since both of them are affected by different parts of a sort of timeline, I think this line infers that their different views will force them apart eventually. "Promise what you will" and her kiss after his words are in the present, when promises are made, before these different viewpoints are realized.
