I think this song is a beautiful love song.

It's right up at the highest point of the love story value spectrum: intimacy. You know your partner so well that you've seen every good and bad part of him ('Well I've seen you suffer. I've seen you cry The whole night through'), and you love them so much that you'll take on the role as their father (strong), their mother (comforting) and their lover (making them happy), because no matter what happens you'll be theirs forever.

The protagonist is fully committed to his loved one, and even though they go through a very bad time at that very moment ('I've seen you cry for days and days'), they are prepared to do what it takes to help and support their love: 'So I'll be your liquor. Demons will drown and float away.' = Alcohol helps to disinfect wounds. And he wants to be their anchor to keep them at the healing shore and not to get out on the stormy sea.

It's a beautiful love declaration.
