to me, I think this song is about not only a girl vic was romantically involved with but also about the girl having an eating disorder.
"don't ruin a perfect thing" could mean he's telling the girl over and over that she's fine the way she is, she's perfect, stop hurting herself because she's beautiful already ("I swear to god I did what I could, I practically begged you, everything was fine.") "Everything was fine" could refer (again) to him trying to tell her she's beautiful as she is.
"I'll bet you money as you're running to the bathroom, you barely started drinking but your beauty never stopped you" could mean in a literal sense that she was drinking but she's bulimic and she goes to purge the alcohol (I don't really think she got sick because of the alcohol itself, because she "barely started drinking" and I think vic purposely said that to show that the vomiting wasn't because of alcohol)
"you died in california by the sulfur and the sea" means just that, she died, and it could've been from suicide or from her eating disorder (because the medical complications from eating disorders are really serious). also, a side note, of all the people with eating disorders who die, 50% of those deaths are suicide and not medical. (at least, I think it's 50%, don't quote me directly. the point is the number is really high.)
