"Girls" is a metaphor for your goals. What you want out of life. It's almost like advice for an artist. Each stanza teaches a little lesson. Surgeons are the one's who seem like they got it together, but never reach perfection. The lifeguard shows that it's not your looks or money or whatever that makes you, it's whatever you want it to be. The painter teaches about accepting mistakes you make and rolling with them and getting over it. And the bartender admits that you shouldn't try to be perfect. Just make it your message short, simple, and sweet. You'll always have another opportunity. Another rainbow. Just around the river bend.
It's pretty self explanatory but I explained it anyways.
