The 'red rooster' (roter Hahn) is an old German metaphor for fire. To 'put the red rooster onto someone's roof' means to burn down his house, as exemplified in a song about the peasant revolts in the early sixteenth century (the song was actually written after the First World War and later sung by far left and far right groups):

"Spieß voran, drauf und dran, setzt auf's Klosterdach den roten Hahn!"

(something like 'Up your spears, put the red rooster on the monastery roof').

In the Rammstein song, the rooster obviously symbolizes the morning and life. The 'red rooster' (i.e. fire) creates a stark contrast to the cold of the nightly graveyard, the snails, etc.

I must say that I absolutely hate this song, it is extreme even by Rammstein standards.
