The song is about the unjust laws that exist in America, particularly the immigration and gay rights laws. She parallels both by creating a senario in which she meets a girl from east L.A. (heavily hispanic population) and falls in love with her but can't marry due to the laws prohibiting gay marriage i.e. the lines "we fell in love but not in court."
As to the "I don't speak your Americano/Languageono/Jesus Cristo" I think that's just her refusing to use the type of rhetoric that is used to justify the laws. Like how christianity is used to justify the anti-gay rights laws and how the notion of America and and the criticism that immigrants get for not knowing how to speak english are used to discriminate against them. Also, languageono is just a play on the word language. In the spanish parts she just talks about the struggle for immigrants/gays and how both gays/immigrants fight for their rights and love and how she's there supporting a fighting along with them.
Also remember, Gaga said that she wrote this song as a response to the Arizona immigration laws, so that pretty much explains the "Don't you try and catch me" lines.
