I think that the song is actually basically about 'watching cowboy films' and a longing that that sort of classic beauty and drama would be recreated in the narrator's life. They wish that they were a part of these films, as it seems more desirable than their own life.
Of course, I could be wrong.
And that said, this is probably only the surface meaning. After all, it IS Alex Turner who wrote the lyrics, I'm sure there's much more to it than that.
