This song seems to be describing when we're with those women who we know deep down on some level are trouble, and we see the red flags, but we continued forward anyway. The end result is, of course, hurt; and as a coping mechanism, we born ourselves anew- both for natural human intellectual/emotional growth and also to improve ourselves for the sake of our own satisfaction (as every Get-Over-Your-Ex website suggests doing).
That said, Kurt could also merely be describing being born a "new man" because of how something so heartbreaking changes somebody-- not as a coping mechanism, but just change from experiencing such hell. It screws with your thinking. It screws with how you see the world.
