This is officially my favorite country song. I think that he is pretty much just saying how he met this girl and he fell deeply for her very quickly. He fell so quickly for her that he thought he loved her then but as time goes on and his relationship with her grows, he realizes that he loves her so much more than he thought he could and he realizes what love is. And now it's to the point where he can't ever possibly picture loving her more than he does now.
