I recently went to see these guys (who were AMAZING may I add) and when they played this, Pete introduced She's My Winona as being about a tattoo Johnny Depp had in the eighties, obviously refering to Winona Ryder, who he co-starred with in Edward Scissorhands (http://z.hubpages.com/u/76416_f260.jpg)
I think, though I'm not 100% sure, he's had a different one tattooed over it since, as they've not been together for a LONG time, both having moved on obviously
And I'm not sure about individual lines and their metaphors but I think this song is just about how quickly people change their mind ("they always bring up how you changed, never the same person when I go to sleep as when I wake up") despite having sworn all sorts of things, like Johnny Depp getting a tattoo to prove his love to Winona and then however long after the couple breaking up.
