I think this song actually has a pretty interesting message to it. Superheroes are not created merely for entertainment, but are also a way of fantasizing as an extraordinary being doing things that we can't do naturally. "What we do – is what you just can’t do" seems to point out that no matter how hard someone might imagine themselves as a superhero, they just can't do it. Those things that we "just can't do" due to the limitations of being human is what makes cartoon heroes so intriguing. Fun song. :)

In almost any wrap or song I hear, there is always a thing or two which leaves me hanging. My desire to correctly interpret every line has bothered me for so long.

Though many kids are in fact very intelligent or even prodigies, there are also some who are too young to understand.
If the latter are too serious or literal, their minds might be cooped up, without proper guidance, discipline or education. That is where adult intervention comes in handy.
I may be wrong, but I do not see any hint of "boasting" or "stop trying" in the line "What we do is what you just can't do."
Humans of course, cannot know or do everything we wish for (like flying, attaining perfection or holding our breath for over 2 minutes), but that does not mean we are not capable of becoming an outstanding version of ourselves.
I believe Jesus is our only perfect and mighty superhero who loves us all unconditionally in spite of our flaws.
If we trust in Him for help and guidance, He is always there to protect us and lend an ear to our silent prayers.
To add a twist, Christmas Day is the Toontown Party that celebrates the birthday of Jesus our Lord and Savior.
