I think hes more-so saying that man is not realizing its potential. A wine dieing on the vine would be one that dies before the grapes are harvested - never making the next step - never ascending to the desired state.
"you are God, you best believe
don't waste your time down on your knees"
Man (grapes) sits and dies seemingly comfortably as such. The artist is essentially attempting to convince the listener to realize their potential - ascend to the divine and become something more (wine).
I also think it's strongly about perspective and placing ones self above man - As an individual your life is what you make of it - nothing exists relative to the individual without the individual himself.
"all words and worlds are metaphors of me"
"never question who I am, God knows
and I know God personally
in fact she lets me call her me"
everything in life is a relative metaphor of the individual - In essence you are the God of your life from your individual perspective.
Life is what you make of it - only those who realize the potential of individuality will ascend to personal divinity. The rest destined to die on the vine.
