the first part is about jesus' birth, but in a more modern sense. "the empty apartment" is the setting of jesus' birth (the barn? i can't think of the right word) "three older gentelmen" being the wisemen and the "wine, cards and chocolate" being the gold francensne and myrhh?

and the part "with all the sins of the world in the iris, there's no false blood, but you will love him, he's from gold gardens our help before atlas was ever born" that's clearly about Christ. he died for the sins of the world, and he is perfect because he is God so his blood isn't tainted by sin. Gold Gardens would be heaven. And he has always and always will be the answer for the world and our guidance.

when she says "he is no one. stranger i met on the street. he never touched me. you're all I need and will ever need" that's talking about how she never met him personally in the flesh but she knows him spiritually and he is everything she'll ever need.
