"We want it, they got it! They claim we'll die without it, But something tells me they are wrong."

I think he's talking about the theory of gaining eternal salvation. It's something we all want, to live forever. Most religions claim you can "live" forever if you let God into your life because you will be brought to heaven and live on with God after you die on Earth. But then he goes on to say that he thinks they're wrong, obviously.

"But we had one foot on the gas and one foot in the grave"

I believe the analogy for "one foot on the gas" is that someone of faith thinks he/she has that "one step ahead of the game" mentality by believing in religion, thinking that now matter what they do in life they're going to be saved but in the end they're just dooming themselves and wasting their time.
