'Bubbles of blue" could be referring to feeling empty inside, like having the Blues, and the "Burst into two" line could refer to the new life of meaning & purpose brought by having Jesus with & within you so that now the two of you are always together.
"Crooked catwalk", again, perhaps a reference to life here on Earth the time here before Heaven being the 'delay'.
I've always loved this song and felt it carried some type of loving "Spirit" but like you have often wondered at the oddity of the lyrical content.
...now I just listen, sometimes sing along, and attribute whatever meaning is appropriate at the time to add to my enjoyment of these Amber Cascades, that beautiful Sunrise/Sunset which each day in the sun/Son brings...
