I think “Saving me who I spy” means that she is constantly “spying” on him, looking at him, thinking of him, and he is the one that keeps her sane, she loves him so much

The previous reviewer made an excellent point, that the question is a sarcastic one. He knows how she feels, but he does not feel the same and is not “there to hold” her hand, or be there for her.
