Amanda has done a couple of interviews where they will ask her about particular lyrics and she brings up an interesting opnion. - When someone writs a screenplay or a book, or plays a part, nobody assumes that the ideas came form something that happened to them or that they play the part because they relate, its just a part they play or write. But when somebody who seems deep writes a song everybody assumes the lyrics are personal.
About the Pony bit. A "one trick pony" is someone or something that does something very well, but that something is all they can do.
This song almost sounds like its about a first love. At least thats the only time I can recall when I loved so powerfully. Everything since has been a comparible watercolor. For whatever reason he doesnt reciprocate her love in the same way. Only in red which, as has been mentioned, would likely represent lust.
