In the first stanza it is describing either her life or yours with her, and how she is giving you free reign to pick at her brain as if reading a book. However, the real problem is that you don't know which "page" to turn to, or what to really ask her. You are incredibly attracted to her, and she is probably attracted to you, but you keep on turning to the wrong pages, your conversations with her getting insights to her mind but not getting you closer to being with her when you want to be, aka "your own deadlines".
I also think that the bad chords and odd timed joining of the chorus to the main singer is perfect for this song. It emphasizes the dischord between what you really want and what is going on.
