Although it could most likely refer to any number of other things, being a former Mormon, I was reminded of the silly hats the Mormons wear in their temple ceremonies. Onion-Head Hat would be a perfect way to describe it, and with all of the "Corporate Cultism" references having to do with building a religion and advertising all rolled up in the song, it is a perfect vehicle to describe the Mormon cult.
