Well, I'm a sucker for catchy songs, but Pearl Jam rules, so that's ok in this case :). I think this song is really beautiful, here's my interpretation:
He's saying that it's really hard for him to love this person and complains about a bunch of things that piss him off, but inspite of this he continues loving.
So, he's saying how difficult it was to fall in love, and in the end he says "I thought it was easy to stay in love", implying two things: first, that he actually did fall in love, and second, the repetitive structure implies that staying in love will be just like falling in love in the sense that there it will be as difficult and have a bunch of annoying things, but he'll be able to do it anyways.
The repitition of "you, you, you" to me represents two things: first, his fixation for the person he loves, which is a part of love, and second, the selfishness of that person for intending to be the center of the universe or something.
I think it's really nice how he describes the hard parts of falling in love. But I will go further in my interpretation: it appears to me that the person he loves doesn't treat him too well, is selfish, and makes him insecure about falling in love, but the beautiful thing is that he does. It's like his love is beyond these problems and the selfishness of this person... OK, maybe I went over the edge, but this is how I see the song.
