I guess this song is about being love with someone and it changing the way you feel about life. Or maybe it's more depressing - maybe it's about wishing/deluding yourself that you will never get old, never die, but this mindset leads to never getting enough of anything (drugs, money, sex). The person that Bowie is singing about is a way to gain this sense of immortality, to be caught in the moment and never have to face the inevitable passage of time and the trials of love.
I know this comment is quite literally a decade old, but I agree with it and although Bowie says that many of his songs aren't personal, I think this one could be. Meeting Iman seemed to really change his life and I think he started to value living a bit more. He realized that he can't live in the present-focused way he did when he was a wild kid back in the 70s. Perhaps the 'you' is Iman, or his daughter. He doesn't want to get old and die because he wants to continue to be around them and...
