It's about a guy who won't change how he is for a girl. He is a human being who has wants and needs, he isn't there to do whatever she wants.
I think the lyrics in the beginning after "ready!" are "hold her in peace", not "holverabeese" or any backwards talk. It's hard to make out but since the song is about turbulent times in a relationship I think it's a foreshadowing of the song's actual lyrics.

I love this cover, I really do. The only problem I have with it is the chorus is meant to be sang by back-up singers, but Axl tackles it all himself with an inadequate overdub, making it sound like he's singing "Now you're messing with a - a son of a b--NOW you're messing with a son of a bitch etc etc."

It would have sounded better if he's made the first 'bitch' louder and skipped out the repeated 'now'.
