I think the heart of the unicorn represents the mystical soul of mankind.
This is the first time for me to try Gamma Ray, as I'm not that into Power Metal, I prefer heavier stuff. But I was shocked when I tried this album "No World Order" especially this song "The Heart of the Unicorn" I adored it. The vocals in "the bloody angels spread their wings" are outstanding...
Kai's voice in this one is awesome ... There's nothing quite like this song.
Well a major power metal component is basing songs on a fantastical world (like something from world of warcraft or lord of the rings). Dragonforce and Rhapsody of Fire are the most notable power metal bands who do this. So, many of power metal songs, despite their beautiful, epic, melodies don't actually have deep meaning simply because their based on a storyline linked to a world that doesn't exist. I think this song might be one of them.
Scratch that. This is more speed metal than power metal. I actually think it talks about the apocalypse and that the never ending struggle between good and evil is "drowning" the earth.

Or perhaps it may be about how society's restrictions make you feel like you're torn to pieces, kinda like The Wall only without the isolation storyline.
