This is a state I'm often in (although as an unrequited lover), that of wanting to stop thinking about someone you shouldn't be thinking about ("I've got to get over") and perhaps realising you never will. It's a sticky feeling (caramel). The sound of the song, particularly that stereo blast of delay effects is a very effective representation of the tumult a man feels either as an unrequited lover or as someone who's lost someone, particularly when Damon sings "low low low low" towards the end over that deliciously simple keyboard part. Love the dancehall piece that immediately follows.

Caramel is a drug reference, Damon wants to get over a breakup and over a bad stage, he wants to expirience something enlightening and inspirational, he even asks god for it. In some interviews he said that drugs have that enlightening effect on him, and I don't believe this song wasn't made on drugs. He is yearning for som divine inspiration. In the end, he sings Give me love, love, love. And that's what the whole 13 is about. For me it's one of the best albums ever and this song should be the best of best.

it sounds like he's comparing his love for her to his love for caramel, it's less of an emotional thing as it is a craving. and like cravings, you often can't get rid of them without just giving in and satisfying it. perhaps he's admitting that because he can't have her that means he'll love her forever because, like a craving, the more you can't have something the more you want it.

also, caramel is sticky--i think (like phys2104 mentioned) the texture/stickiness of caramel is a metaphor for the situation.

Damon seems very depressed in this song, so it probably is about his breakup with Justine. He may be referring to trying to get over his depression when he says "I've got to get better", and it sounds like he is suffering from writer's block due to being so miserable - hence "I've got to find genius". As for the "Light, Day!" bit at the end, perhaps this is the metaphorical "light at the end of the tunnel" for him.

About Damon's split from Justine Frischmann (as is most of the album) Him telling himself that he has to get over her and make himself better but at the end coming back to the conclusion that he'll love her forever. The title Caramel somehow suits the texture of this song so well.

The point where "you are" leads to a burst in the music is my favorite part. It sounds like the most body-wrenching part of his struggle.

Like just about every song on 13 (and most blur songs) this is really beautiful. It seems to be about trying to reach a better state after the end of a relationship but also holding on to it in a way (like when you eat a rolo and still have a bit of caramel left on your collar, even though the rolo is finished).
