I think the song reflects on Blunt's acquired fame after releasing "You're Beautiful"(2005) And how he could never again write a song like such, since then his fame declined so he can tell you what he's doing now, but you don't really want to know.
He wrote this song for the one and she has somehow not taken it seriously. Maybe because he never expressed this about her or maybe he hurt her and she feels it is no longer truth. She may be mocking it out of spite or because she doesn't relate in the same way. He wants her to feel what he feels so he wants her to express her feeling so he can write something so touching it will feel special to only her through him.
