"Fast car" is kind of a continuation of Bruce Springsteen's "Born to Run." It has all the clawing your way to a better life, but in this case the protagonist never makes it with her love; in fact she is dragged back down by him.
There is still an amazing amount of hope and will in the lyrics; and the lyrics themselve rank and easy five. If only music was stronger it would be one of those great radio songs that you hear once a week 20 years after it was released. The imagery is almost tear-jerking ("City lights lay out before us", "Speeds so fast felt like I was drunk"), and the idea of starting from nothing and just driving and working and denigrating yourself for a chance at being just above poverty, then losing in the end is just painful and inspiring at the same time.

There are a lot of ways to look at it, but overall, the singer is saying that he cares about the person but doesn't think he deserves someone as good and pure as her. He has been corrupted by society/depression/heartbreak/etc., and wants to protect her from having to go through that. He just doesn't want her to see how awful he can be on the inside.
I like your interpretation as it is very similar to my own. This song remided me vastly of a character, Leo Kostomarov, from a novel, set during World War One and the Russian Revolution, who is in love with a girl named Sonya, though she doesn't know it. He however, has had a horrid childhood, despised and neglected by his father, and is a revolutionary and an athiest, while Sonya has always been loved and wanted. he tells her everything eventually because he feels compelled to be honest.
This just happened to me.... A friendship ended for a reason... (He wanted to protect me & made up an excuse to let me go)... I didn't chase or challenge him... I walked away.... At the end of the day .... A FRIENDSHIP THAT CAN END NEVER REALLY BEGAN....
