I love this song! Her vocals are so haunting!
Basically the song is about how a loved one has died and how she refuses to give them up for anything. The narrator of the song, Kate's persona if you will, can't accept that her lover is dead and that she is alone. Nothing else seems to matter to her anymore except her lover in the ground.

I think there’s more to it than someone in mourning who cant let go of their deceased lover and this is hinted at in the phrase “ the priests and the friars hold me in dread. As well as the phrase “thanks be to Jesus we did what was right” and reference to her maidenhead. If it were a simple case of someone in mourning who can’t let go the priests would be consolidative and supportive but the phrase suggests they are otherwise. Something not right here with the church
