A carcass is a dead body. Siouxsie said in an interview way back that the song was a weird little story about a butcher's assistant who can't get girls, so he falls in love with a big slab of meat hanging in the backroom, and he wants to be more like the thing he loves, so he chops off his arms and legs. Yes, Siouxsie is friggin' awesome, kids.
