I think this song relates to working americans and working people in general from the perspective of the family and the breadwinner. Theyre pushed hard in the trades every day expected to be the fastest and strongest "horse on their track" and if you happen to get sick and not able to work at that rate anymore, theyll gladly kick you to the curb(put down the fastest horse in town)

They dont have time to mow their lawn, watch the children play, keep the squirrels off the fence, and they arrive home spent each day. Wasting your best days trying to survive instead of thriving off your endeavors and loving the time with your family.

The family is left watching the shoes come loose on that old horse and are helpless to do anything because dad has a duty to provide. I think it implies the kid wants to be the next "big thing" to escape this sad fate. Maybe sturgills personal experience.
