Seems to me that the song is about a one night stand.
The lyrics speak to how he "won't be around".
Seems to me that he's desperate to spend one night with this beautiful woman who reminds him of the moon in both looks and how they'll both be gone by morning.
Rather than dismiss him now, he's hoping they can be together and enjoy each others company, despite knowing where they'll ultimately end up.
It's quite sad but ultimately hopeful, if only for the pleasure of the moment
I Think they are a couple thats a lot apart, or ex couple, or maeby they are breakibg up because of distance conditions, seems like two people thats knows each other well. As he severel times mention how she knows him to well. He doesnt want to be friends. He wants her. But for some reason he cant.

I don't think it's about a one night stand because he sings a lot about a girlfriend he lost because he's on the road a lot. She cheated on him when he was gone for 4 months. The song "Long Flight" is about that experience of catching her " in flagrante delicto" and how it broke his heart. He's a very sensitive guy.
I think this song may be about a one night stand as previously stated, or possibly a chance encounter. To me it sounds like at first they hooked up or met, but he fell in love with her and the love was unrequited. They keep having encounters or hookups, but she always leaves. He wants her to be his girl"friend" or at least stay a close friend, but she continues to keep it casual.
Alternately, I think it could also be about a romance between people that are drifting apart, he still loves her and wants her to stay just one more night.
Both seem to work, but the latter makes better use of the (she sees everything/she knows me too well) lines.
