According to a youtube video, Clay's usual is two iced teas. Josh once asked him "Why not get a refill?" "That's not how I work." Clay said. It also hints that the song was inspired by a trip to Spartanburg, SC. Waffle House is a chain of restaurants all over America that specializes primarily in breakfast foods. They are open 24 hours a day, and usually located in the seedier parts of towns. It's essentially what they did at the time to relax after a show.
