I think this song is about sheltering a loved one. The loved one fears death but "death is a force not a man on a horse", thus it cannot be defeated. "I'll keep you safe while you sleep" is the desire to keep her from death for as long as possible as he doesn't want to lose her because he loves her: "North isn't true 'till it's leading me to you". I'm unsure of the Biblical reference of Mary and Joe but I assume these are either Jesus' mother or his wife and Joseph son of Jacob. The line "We fight those demons day in and day out" I think means we fight fears every day but we shouldn't.

This is just my opinion but this is how I take it and it's truly a beautiful song.
