My first thoughts on this song: It reminds me of the Pixar film Finding Nemo. There's a fish called Dory (Ellen DeGeneres) and she's a total dunce. It made me think of two fools in love. This is likely wrong, but this is only my first impression.
Ed actually said that's not about Finding Nemo OR that Dory. instead "Dory" is the name for a small boat... but he thinks it's hilarious that someone might think it's Finding Nemo.

what does Ed sing after the lines "I'll keep it here all hour" and "I can decide its color"? I always sing "it's a dryer" even thought that's so ridiculous... but it makes me laugh :)

to me, it feels like they are saying "I can't be here all hour"
This seems to be a more detailed version of the lines "And it was mamma, that got drowned in out, in that deep blue sea" from Deep Blue Sea.
Dory could be the mother's name, which is kind of a pun, as the definition of dory is " a flat-bottomed boat with high flaring sides"
So 'We’ll swim around like two dories" could be almost a macabre pun about Dory drowning...translated to "we won't swim well".

Its kind of funny to me, my interpretation may be different from the majority, but I think its pretty dark. To me its a man infested with demons, schizophrenic possibly, and he and his significant other commit suicide. But he is commensurating with the voices in his head to convince her to die with him. Its a very pretty song, but has a dark meaning.
a dory is the type of fish that dory is in finding nemo, but im sure he is referring to the type of fish, which is a saltwater fish being let loose into a bay, which i dont think saltwater fish can survive (at least tropical..) and an "eddy" is a current in water found in oceans.. but yeah, im pretty sure the song relates to being put into a situation that you dont want to be in etc etc, or at least something along the lines of that

I think if you're thinking in terms of Dory the character, the song could be about losing yourself in the moment -- even if it's scary -- and forgetting everything, etc. But if it's just about two random dories, I think it becomes a lot darker. I agree, it makes me think of being put into an awkward situation and trying to escape/forget about it.
