Ohmygod. Seriously, can't believe nobody's commented this one.

It's self-explanatory, but Sophie is basically just saying that she's been through the whole change-yourself-for-those-you-like thing, and now that she's found the person she really loves, she realizes that if someone doesn't love her for who she really is, then they don't deserve her. Since he showed her that she didn't have to change, she's telling him she won't make him change either.
