This such a beautiul song! I wonder why no one has left a comment here.. My interpretation goes like

she has so much to do but she cant get her mind of him to do it.. I dunno what the elephant line means

And I keep telling everyone it's something like the flu But I'm sick of feeling lovesick over you

This is really simple.. she is feeling so bad over him that she can't get out of bed and can't do anything and her mind isn't in one place .. so everyone is asking her what happened? and her answer is that she has got the flu.. which isn't tru but it describes her condition and saves her from giving more answers

She talks about her love leaving her.. Generally when we talk about love, we talk about how cupid pierces our hearts with his arrow, so here she is talking about removing that arrow from your heart and the pain it causes..
