Its actually a howlin wolf / willie dixon cover from the sixties.
Yes, correct, little red rooster is aboyt being deprived of sex. Like many old blues songs (this one is written by the great Willie Dixon) its meaning is alegorical. If it had a literal meaning the white ruling record executives would not let the black men sing or record it.

Yes, this is a rolling stones cover.
The members of the doors greatly respected the stones, and tried to emulate them in various ways, while being original in their own way, I feel like they succeded.
However this was one of Jim's personal favorite songs to perform, he loved it.
