I COULD be wrong here, but my interpretation is as follows:

First verse talks about the poetic voice in the first person, He is looking back at all the choices he made in life, wondering if he made the right choice. I get the feeling this is a family man who had to choose very early in his life whether or not he was going to dedicate the rest of his life to his family, or to his own personal goals. Maybe he got his girlfriend pregnant too early in life so he had to choose between the two? He legitimately questions whether he made the right choice. In "rainbows or burning bridges" he means that the right and wrong choice all look the same from where he is standing. until he looks at his child.

The chorus is about seeing so much of himself in his child. Maybe that child can carry on his dreams? And that child in him/herself inspires the poetic voice, makes him feel fulfilled already, without the need to complete those personal goals (the father from here on out) The child makes it all worth it.

Second verse is about his girlfriend (possibly wife). It seems like they are still together, and he loves her, but, sees her struggling. She tries to hide it, but she isnt happy with how her life turned out either. She has to hide it to keep things running, but the father can tell from the tremor in her hand that she may want something more from her life.

Again, chorus plays. all about how the child is worth it all.

In the end though, as he looks at the child almost in an admiring way. The poetic voice is watching the child build up and tear down castles. Now this can take one of two interpretations.. A literal one (maybe the kid was actually building sandcastles at the beach, or a toy castle)... but a more metaphorical one where the kid is, just by being alive, building up his fulfillment in life, while tearing down the feeling that his life was lived without fulfilling any of his dreams.
