I have to agree, I think that any theory that this song is about creation science is over the top. I think that this song is pretty litteral in meaning. In fact, my theory is just that Ben Gibbard and Zooey Deschanel met on a Monday morning.

The first stanza is just a description of Zooey.

Not sure about the second stanza, but maybe just saying that Zooey is a bit of a romantic and a dreamer.

The third stanza is about Ben, about him wanting to make things work even though he has some issues, and that he needs Zooey to keep him grounded.

The chorus is about growing old, about time passing.... looking in the mirror and time has passed. And yet the "lines" (wrinkles) and "greys refined" (grey hairs) are fine because age has and will allow their relationship (that "began on Monday morning") to grow.

The last chorus is a bit of an ode to Zooey, that even though time will take a toll on her body, Ben will always see youth/beauty in her...

I just added my corrected lyrics.

Notice that the chorus changes the last time around 3:28 of the song. This is the only part that I'm not 100% sure of, but I've listened to it mutliple times, this sounds better than all the stuff I've been finding for it, and it makes sense. Please correct me on this line if you have a better idea, but I think what I got it pretty close to it....
