The "deal with God" the singer wants to make is specifically to experience (hetero) sex from the man's perspective. "Running up the hill" is her perception of a man's forceful, deterministic approach to orgasm; the singer can visualize and articulate this difference, but she cannot experience it.

This is quite an obvious reading (one which corresponds with Kate's demure explanation), so it's surprising so many people miss it, including male singers who cover it. If there's a song that makes absolutely no sense as a cross-gender cover, this is it.

This song depicts a ritual human sacrifice from the victim's perspective. She is given (drugged?) wine, ritually cleansed ("You wash my tears away") and illuminated by bonfires, which are "roaring with the wind." "This is what I give" -- her life; "there is life within" - promise of an afterlife.
