This song is clearly about the relationship between a father who is a butcher and his son who he is training as a butcher for the family business.
It's from the point of view at the son, who is being forced to learn the trade from home before working in the shop, hence 'Everyday I sit at home and sharpen up the knives' (an important and basic butchering technique). He doesn't want to do the job (Today is the tomorrow that I dreamed about last night) and longs for something else to come his way. His father is a bad teacher (Well the blind lead the blind) which frustrates him further. At the end of the song he is breaking down (Horses hooves - which he has 'given up on' - is a butcher term for the H-bone, which is a difficult piece of meat to cut and prepare) and his final thought before he commits suicide is to tell his father waht he really thinks (although he doesn't know if that is the way he really feels or if he thinks that is the way he feels).
