according to Art Garfunkel, the plants and animals are metaphors (as well as personifications, obviously). The oak tree represents greed; the swan represents vanity; and the golden wheat represents hypocrisy.

To me, it's about life and death. Life is full of cruelty and selfishness, but death is gentle and caring. When no one else will be there to take care of you, when no one else will love you, the earth will softly take you back in her arms and never turn away from your suffering.

I really love this song... to me its about rejection in a foreign place, where everyone is prejudiced against a person for who he is or what he looks like
