I think this refers to the bible story where God destroys Sodom but saves Lot and his family but Lot's wife looks back at the destruction of the city and gets turned into salt. I like the way he twists this metaphor, to me saying, we might be looking back at pain and thus get 'turned into salt', but it's worth it. Man this is such a beautiful song. Every line is just gorgeous

It was said if you looked upon her you would turn to stone. I think what he is saying is that even if he knew he would turn to stone it would have been still worth it getting to know her, look upon her etc
My daddy died last year in a car accident and i found this song about a month later. Isn't it funny when you feel like a song was written exactly for you? My daddy grew sunflowers and loved them like children, we literally had hundreds around my house and we grew them on his grave at the graveyards, despite the funny looks we got!! The song makes me so sad, but so happy at the same time, kinda like he wanted me to find it you know??

Love the book metaphor; the idea that he has so many memories of this person that even one single page of them would need breaking up and remembering individually. Beautiful.
