So when he says "i just want my arsenic and clover, no matter what the heathens say" means he'll take their medicine, because it seems to be working, even if others would say not too, since it's unsafe. A heathen is a person who discounts every religion out there, except for the major three, so I think he's pretty much saying "I don't give a shit if the heathens say this remedy won't work, I'm using it, I believe in it"
